Sautéed Shrimp Chicken & Asparagus Alla Vodka

Ingredients

  • 2 cups of rice
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tbsp diced shallots
  • 1 tbsp minced garlic
  • 1 lb shrimp and/or 1 lb chicken
  • 1 cup asparagus, cut in 1” pieces
  • 1 cup Mushroom (Optional)
  • Pinch crushed red pepper flakes
  • ½ tsp Old Bay seasoning
  • 1 jar Spinato’s Vodka Cream sauce
  • Salt & pepper to taste
  • Fresh basil, torn

Directions:

  • Cook rice per instructions.
  • In a small pan, add asparagus and blanch for 2 minutes. Drain and put asparagus aside.
  • In a large sauté pan, melt 2 tbsp. butter and 1 tbsp. olive oil. Add shallots and garlic, sauté for 30 seconds.
  • Add chicken and sauté for 2min then add shrimp, mushrooms and asparagus, season with salt, pepper, old Bay seasoning, and crushed red pepper flakes. After one minute add splash of white wine (optional).
  • Sauté until shrimp is pink.
  • Add 1 jar of Spinato’s Vodka Cream sauce and heat.
  • Place mound of rice on plate and top with ingredients.
  • Sprinkle with parmesan and fresh basil.
